    1. Hi Lucia, pavlovas in a humid climate can be very challenging…but not impossible. Pay close attention to getting your egg whites stiff, and SLOWLY adding that superfine sugar. You may need to bake your pavlova a little bit longer…Even if it’s a bit over baked, that’s going to taste better than a soft, sticky pavlova. Look for it to easily pull away from the pan when baked. Keep on practicing!
